Today people around the Caribbean experiment with different ingredients and foods to add a greater range and delight to their menu.
They also do so to up their game in pleasing their palate as well as to entertain their guests and show off their culinary skills.
Now, here is how people from St. Vincent and the Grenadines, a southern Caribbean nation, will get you started with an easy, tasty hors d’oeuvre that will have you coming back for more — stuffed cucumbers.
- 2 cucumbers
- 2 hard-boiled egg, chopped
- 4 ounces chopped ham
- 4 tablespoons mayonnaise
- 1 teaspoon grated onion
- 1 shredded carrot
- Remove ends from cleaned cucumbers. Scoop out seeds.
- Mix remaining ingredients and blend well.
- Stuff cucumbers, wrap, and place in refrigerator until chilled.
- Serve sliced.
