Over the years, Jamaica has developed a reputation as a hub for some of the best entertainment events in the Caribbean and top-quality local food.
However, the celebration of Christmas is when all the stops are pulled out, and everybody has a ball.
And integral to the celebration is the eating of Christmas cake, and this is how it’s baked:

Ingredients
1pound(s) Margarine
1 pound(s) dark sugar
4 medium eggs
1/2 teaspoon(s) vanilla essence
1/2 teaspoon(s) almond flavoring
6 cup(s) counter flour
1 teaspoon(s) mixed spice
4 teaspoon(s) baking powder
2 teaspoon(s) nutmeg
6 tablespoon(s) Browning
3 cup(s) red wine
1 pound(s) mixed fruits, soaked
Directions
Cream Margarine and sugar until light and fluffy.
Gradually beat in eggs one at a time.
Stir in vanilla essence and almond flavoring.
Combine counter flour, mixed spice, baking powder and nutmeg.
Divide the flour mixture into three and liquid into two.
Fold the flour mixture into the creamed mixture alternately with Browning, red wine and mixed fruits.
Scrape into a greased and lined 12″ baking tin. Bake for 1 1/2 hours at 180°C/350°F or until a metal skewer inserted comes out clean.
